Phil meets up with friend and chef Nancy Silverton at maybe the best truck stop in the whole world in Umbria, Italy. The head baker Luca is known for a italian flatbread called “torta al testo.” They enjoy a number of different sandwiches made from the bread.

On their next stop in Umbria, Phil and Nancy enjoy a quick coffee break in the middle of Panicale at a beautiful outside eating area. They talk about the surrounding area, and even some friendly competition between local cafes.

Nancy takes Phil to her favorite restaurant in Panicale. There, they learn how to make traditional Umbria pasta specific to the region. They enjoy a crostini with “olive oil puree,” tagliatelle with black truffle, and the umbricelli with a wild boar sauce and juniper berries.

Phil reunites with a family that owns a bakery in florence that he visited during his first trip to Italy 30 years ago. Phil’s whole family including his two children eat their traditional baked goods, including a delicious homemade pizza.
